Ingredients
  

Main Ingredients:

  • 2 tbsp olive oil
  • 1 pound boneless skinless chicken breasts
  • 1 small onion finely diced
  • 4 cloves garlicminced
  • ½ teaspoon red pepper flakes optional
  • 1 teaspoon Italian seasoning
  • ½ cup sun-dried tomatoes chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 tbsp all-purpose flour
  • Salt and black pepper to taste
  • ¼ cup fresh basilchopped

Optional Add-Ins:

  • Extra creaminess: Add cream cheese or coconut milk.
  • More protein: Stir in white beans or rotisserie chicken.
  • Low-carb: Replace flour with cornstarch slurry or use cauliflower rice instead of pasta.

Instructions
 

1. Sear the Chicken:

  • Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, then sear for 3-4 minutes per side until golden brown, but don’t worry about cooking them through. Remove and set aside.

2. Sauté the Aromatics:

  • In the same pan, sauté the diced onion for 3 minutes. Add the chopped garlic and red pepper flakes and cook for a further 30 seconds. Stir in the Italian seasoning and sun-dried tomatoes and cook for 1 minute to release the flavour.

3. Create the Base:

  • Add flour to the pot, stirring for 1 minute to create a light roux. This helps thicken the soup. Slowly pour in the chicken broth, stirring constantly to prevent lumps. Bring to a simmer.

4. Cook the Chicken:

  • Return chicken to the pot. Reduce the heat to low and let the soup simmer for 15–20 minutes, allowing the chicken to fully cook and absorb the flavors. After the chicken is fully cooked (internal temperature of 165°F / 75°C), remove chicken, shred it, and return it to the pot.

5. Add Creamy Elements:

  • Stir in heavy cream and parmesan cheese, simmer for 5 more minutes, and adjust seasoning as needed.

6. Finish & Serve:

  • Stir in fresh basil and serve the soup hot with crusty bread or a fresh salad.
